Is a particular way one needs to setup up a network in order to capture VOIP streams from IP phones?

I have a small office setup with a switch feeding two fanvil phones, and then daisy chaining into pc's. Have never been able to pick up a VOIP stream or any RTP traffic. I have tried using every interface given as an option but still not able to pick up any traffic.

Basically what I am trying to do is call from extension 200 to extension 201 and see how it all fits together. Both phones have the PC's feeding off them, and both are plugged into the same switch on the same network. It is not a managed switch.

As you're capturing on a switched network you'll need to arrange that the required traffic is actually available to your capturing device.

See the wiki page on Ethernet Capture Setup for more info, you'll likely need either a cheap mirroring switch or a tap to get the results you're looking for.
