Do you mean "don't show me packets to or from my IP address", or "don't show the IP address when packets are displayed in the summary or detail panes"?

I think I understand your question. You can configure Wireshark to not display the IP address columns, but the information is still in the PCAP file. If you are worry about sharing the IP addresses, use TraceWrangler to sanitized/anonymize the PCAP file.
