Can wireshark capture the packet from 40Gb Ethernet? Like it does for 1GbE and 10GbE. Thanks.

Wireshark can capture traffic from any type of network adapter on which the OS supports traffic capture; OS support for Ethernet traffic capture is independent of the line speed of the adapter, so there's nothing special about 40 Gb Ethernet here.

Whether Wireshark can keep up with 40 Gb/s of traffic is another matter - but the same applies to any higher-speed networking technology.
