I have limited understanding of TCP/IP and all protocols for that matter. I'm just concerned that maybe I need to watch video rather than a text book per say. Many vids I have found on youtube seem so leave things out or just aren't what the describe them to be. Is the any tutorials on line that start from a beginners perspective and explain the foundation and build on it? I am willing to pay for the education, just can be sure I'm going with the correct one if I found it.

Why not start with the Wireshark User's Guide?

On the Wireshark project page is a big button named "Learn". Go from there.
